Kashmira’s recipe for Peas Pullav

This recipe is part of our series of recipes shared by our multi cultural staff at Smartpack which we will publish every few months as a break from the technical and design blogs.

Kashmira is our Smartpack production office manager. She has been with the company for over ten years. Kashmira was born in Mumbai and studied interior design and has agreed to share one of her family recipes with all our blog followers. We hope you enjoy making and eating this dish.

Rice with peas – Serve with plain yogurt

1 cup rice (Indian long grain basmati rice) rinsed, soaked for one hour & drained

1 cup frozen peas

1 medium sized potato cut into medium pieces

1 tsp each of cumin & coriander powder

2 cups water

½ cup finely chopped coriander

½ cup finely chopped chives

Juice of ½ a lemon

Whole Spices for Tempering

1 tbsp oil

1 tsp cumin seeds

½ piece of cinnamon stick

4 to 5 curry leaves

2 cloves

1 medium onion thinly sliced

Grind to Paste

3 to 4 hot green chili

1 inch fresh ginger root

½ cup coriander

2 tbsp coriander

  • Heat oil in a heavy based or non stick saucepan
  • Add all the whole spices. As they sputter add the onion & sauté until soft
  • Add the green paste, cumin & coriander powder & fry for approx 3 minutes
  • Now add peas, potatoes, coriander, chives & sauté for another minute
  • Add the water, salt to taste & bring to boil
  • Add the drained rice, bring to boil
  • Add the lemon juice
  • Switch the temp to low, cover saucepan & cook for 10 to 12 minutes
  • Open, fluff the rice with fork, if it is cooked, turn off the heat, cover for another 5 min – the rest will be done by trapping the steam
  • Garnish before serving
